Superstar New York chef Jean-Georges Vongerichten will open his first Canadian restaurant Jan. 24 in the 119-room Shangri-La Hotel, Vancouver, also opening that day.
At Market by Jean-Georges, Vongerichten will adapt his ‘modern global’ style – eliminating meat stocks in favor of intensely flavored vegetable juices, fruit essences, broths and herbal vinaigrettes – to Vancouver by using local ingredients.
The restaurant will serve lunch and dinner and feature an 84-seat dining room, with two private areas, one seating eight and the other 12; a bistro accommodating 36; a 60-seat outdoor terrace; and a bar with ‘musical chair’ seating for 29.
