Metropolitan Hotels is bringing its Senses restaurant brand to Canmore, Alta., with the opening of Habitat Restaurant, in the Grande Rockies Resort, on June 18.
Head chef Vincent Leung’s menu includes influences from China, Indonesia, Japan, Thailand and Vietnam, anchored by local ingredients.
Dishes on his launch menu include pan-seared sablefish in an herb/mustard crust and spicy, tea-smoked beef short ribs.
Leung began his career at Hemisphere’s Restaurant + Bistro at the Metropolitan Hotel Toronto and worked in the hotel’s Lai Wah Heen restaurant, a favourite of meeting and event planners.
Dark millwork, rich gold and cream textiles, and colourful light fixtures foster a modern, intimate feel.
“The culinary scene in Canmore is the best in the Rockies, so we knew a special restaurant and menu would be needed to stand out,” says Henry Wu, president of Metropolitan Hotels.
