Served as part of a meal program or as an optional or spousal educational activity, cheese and honey pairings are available at the seaside Montage Laguna Beach, in Southern California.
Under the direction of the resort’s master cheesemaker, Jason Truckenmiller, pairings can incorporate over 150 different varieties of cheese from around the world, including Isle of Mull cheddar, from Scotland, which Truckenmiller calls the “best cheddar.”
The cheese pairings can incorporate some of the 100 or so different honeys, collected from far and wide and available at the hotel.
Truckenmiller explains that the secret to pairing honey and cheese is “to match intensity of flavours. As with wine, the colour of honey denotes intensity of flavour,” he says. All cheese plates can be customized according to budget and preferences.
In 2013, the resort will celebrate its tenth anniversary and will be introducing new packages, including a celebrity chef culinary series.
